I tried to make this far more difficult than it actually is.

Groan......can't believe I didn't do the simplest thing.
Only works if you don't call it an aubergine. (Memories of the "courgette" OWW during the Puzzlethon.)
I kinda think the fact that the "easy" way that none of us tried first was the actual solve method made this puzzle interesting.
