So to keep Brownie from panicking because she was unaware and as a tribute to potato loving Tanganites and to the great state state of Idaho:
here’s a great dish to celebrate National Potato Day with – this easy Potato Breakfast Casserole from allrecipes.com. With the “breakfast for dinner” movement still going strong, this could feed a small family for a couple of meals.

Potato Breakfast Casserole (adapted from allrecipes.com):
•4 russet potatoes, cut into small chunks
•5 pieces bacon, diced into 1/2-inch pieces
•1 tablespoon butter
•2 cloves garlic, pressed
•1 teaspoon salt
•1 teaspoon pepper
•6 eggs, beaten
•1 tablespoon dried oregano or other favorite seasoning
•1 cup shredded cheddar cheese or other favorite cheese

Preheat oven to 400-degrees F. Prepare an 8” x 8” baking pan with cooking spray.

Combine potatoes, bacon, butter, garlic, salt and pepper in the 8” x 8” pan and bake until potatoes are tender, approximately 30 minutes. Reduce heat to 350-degrees F and remove pan from oven.

Pour eggs over potato mixture and season as desired; mix gently return to the oven until eggs are set and cooked through, approximately 10 minutes. Remove and sprinkle with cheese of choice; bake until cheese is melted, about 2 more minutes
