I used cardstock to test all of our Henckels knives before and after sharpening. Each knife showed an improvement in sharpness but not to the point you could shave with knife. I would consider using a tiny amount of honing oil on each stone. Corn oil works well for this purpose or simply water. Also, the sharpening steps 1, 2, 3 and 4 ar set up for left hand use.
