I am commenting only as regards my specific use. I have an infrared grill with max. temp. 450 degrees F. I have no dishwasher & my sink is not large enough to put the whole grill surface in it for cleaning. This grill mat fits easily, is nonstick & easy to clean, & is sturdy. As I want the actual grill surface to stay clean I regard “puddling” to be advantageous; after removing e.g. meat, let the surface cool a bit & sop up the puddles with paper towels.

They stop flame ups from dripping meat, those flare ups are toxic.
